This is a quick way to make pretty good Vietnamese rice noodle soup or pho.
Pho noodles or any kind of rice / glass noodles
2 liters chicken or beef soup / stock
0.5 cup fish sauce
3-6 garlic cloves, sliced or crushed
3 star anise
2 cinnamon sticks
2-4 thick slices ginger
1 onion or a handful of spring onions, very thinly sliced2 tablespoons caster sugar
Thinly sliced beef strips
1 cup bean sprouts
Small chilli peppers, green and red, thinly sliced
Basil, mint, coriander leaves
• Put all the broth ingredients into a large pot and bring to boil. Simmer for about 20 minutes.
• Make pho noodles according to instructions on packet, drain well and place in soup bowls.
• Put sliced beef on top of noodles, then add broth to cover.
• Add other finishings to taste.
